Probably the most well know Oolong of continental China
Produced in the South East corner of the Fujian Province, the cradle of Oolong teas, Its name translates into Iron goddess of Mercy. This tea is fermented at around 40%. Its strong amber coloured liquor will render sweet woody flavours.

brewing time: 3 to 4 minutes
Cover the leaves with hot water and remove it imediately.
let the leaves breathe for a short while before pouring hot water again
You can make 4 or five brews with the same leaves
